ONE – To begin
- Pan fried pink Pigeon breast alongside preserved salsify root vegetable with a sweet blackberry jus GF
- Or
- Steamed bao buns filled with wild mushrooms and spinach, whipped Cumbrian goat’s cheese and candied walnuts (Can be made vegan)
TWO – From the sea
- Razor clams grilled in their shells drizzled with zesty salsa verde, capers and olive oil and finished with a golden panko crumb
- Or
- North Atlantic Sea trout cooked in a gentle confit served with samphire and finished with a dill butter sauce GF
THREE – Soup
- Cream of vegetable soup V / GF

- Lightly spiced roasted pumpkin soup finished with crunchy toasted seeds GF V
FOUR – From the Farm
- Seared calf’s liver served with creamy Parmesan and chorizo polenta and topped with roasted shallots thyme jus
- Or
- Whole roasted poussin paired with homemade Stornoway black pudding tagliatelle served with tender petit pois and a streaky bacon crisp

- Pan fried Chestnut gnocchi served with silky celeriac purée, sage brown butter, crispy sage leaves, quince gel dots and finished toasted hazelnuts V
FIVE – Palette cleanser
- Homemade cinnamon and orange sorbet

- Yuzu rice pudding
Six – Dessert
- Warm caramelised pear topped with creamy Gorgonzola ice cream and a sprinkling of crumble crunch
